Hi David. I'm having a dumb moment here please. Could you just quickly sum up how to work out the grams costs please. Thank you!
Your question could be answered a number of ways depending on what part of the video you are talking about. Basically,, the grams cost in a recipe will be the total cost of the item divided by the number of grams in the purchase unit (case, kilo, grams, etc) times the number of grams in the recipe. Example: if you purchase one package of something that weighs 28 grams for $10 then the cost is $0.357 per gram. And if the recipe uses 6 grams then the cost is $2.143 ($10/28*6)
@@ChefsResources Hi, appreciate your reply! All my recipes/ingredients will be in grams/tsps, so I guess I’m just trying to work out if the inventory sheet process will be the same. E.g. I have a case of 20 x 250g Butter totalling 5000g/5kg. And then inputting that onto the main recipe coating spreadsheet. Thanks again!
@@kcr8437 Yes, you can setup the inventory sheet to cost ingredients any way that you wish. The video demo shows how to do it.

Lots of great content from knowledgeable Excel users. But let me say for many folks what Mr. Buchanan offers is all that is needed. There are some Chefs interested in building an Excel formula skill set. BUT many folks just want to know how to double or half a recipe. This video does it with simplicity. It does not convert according to exchange rate, it just convert the symbol
If you are looking for it to mathematically convert one currency into another then it will not work. You will need to do that math yourself or find a tool designed for doing that. This example just shows how to use the form with a different standard currency symbol so as to not confuse people by displaying the incorrect currency symbol for their region.

I don’t see how anyone can use a Miyabi and say that it’s not a great knife. It is hand made quality from a major manufacturer. Close attention is given to every detail. I believe that Miyabi is one of the best knives money can buy. Of course, there are master craftsmen in Japan that can create custom masterpieces. These masterpieces may cost you 1000+ dollars. They are precision instruments, no question! A perfect blend of art and utility. Still, these custom pieces may require more up keep and care to avoid corrosion. The handle will also require diligent care. They may also be more subject to blade chipping. All that being said, are they truly better than Miyabi? Perhaps technically, but from a practical standpoint? All heads must bow, Miyabi is one of the best there is. It doesn’t impune the fine custom craftsmanship and tradition of blade smithing. The quality of steel in Miyabi blades gives them extreme hardness without being as brittle. With proper use, you may rarely need to sharpen the Miyabi. The edge is highly refined with 9 degree edge or a bit less. What Ferrari is to cars, Miyabi is to knives!

Thank you for the nice video review. I own a complete set of Shogun series Kyoku knives and I am very pleased with them. I recommend using a ceramic sharpening rod over a traditional sharpening steel. The VG10 core of those knives has a preference it would seem.
Having declared my dissatisfaction with this sharpener last night ruclips.net/user/postUgkxDcr-y2Pf6xdnrFHrSP7dl9kpKaCozcSQ I thought about the problem some more. It occurred to me that I might be undoing each attempt at achieving a sharp edge by the repeated attempts. So, I tried to clean up the unsatisfactory result by honing with only positions 3 and 4.Miracle!! A really nicely sharpened chef's knife, more than enough to handle my needs. Admittedly, it did not reach professionally sharpened razor-fineness, but it is now significantly sharper than it was. A bout of breaking down carrots convinced me. So, major apologies to the manufacturer, Amazon, and all happy and potential owners! Follow the directions: don't buy it if you have ceramic blades; and don't overwork your knife blade.
